Session Overview:

Take a deep dive into trends that are impacting menu development in 2025 and beyond. Katie Ayoub, president of Katie Ayoub & Associates and managing editor of Flavor & The Menu, shares the magazine's latest Top 10 Trends. In this session, Katie will walk through each trend, offering in-market examples and exploring the opportunities behind each one.

Speaker/s:

Katie Ayoub is president of Katie Ayoub & Associates. She is a flavor trends expert, content creator and food & beverage consultant. She holds more than 20 years in the industry, providing forward-thinking editorial content, seasoned insights and dynamic trends presentations—all aimed at inspiring chefs in their future menu development.

Katie serves as managing editor of Flavor & The Menu magazine, one of the restaurant industry’s leading authorities on flavor trends, and is a content strategist for the Flavor Experience, an annual conference geared toward high-volume menu developers. She is a regular speaker and moderator at industry events across the country, including the Flavor Experience, The Culinary Vegetable Institute and The Culinary Institute of America. She has also served as a judge for numerous cooking competitions, including the PBS network’s “The Great American Seafood Cook-Off.”

Katie has worked in foodservice publishing in various roles throughout her career, including: editor-in-chief of Sizzle, contributing editor to The National Culinary Review and managing editor of Chef magazine. She is an award-winning writer and a proud member of Les Dames d’Escoffier.

In the world of custom copy development, Katie specializes in creating content that engages menu developers while delivering effective brand messaging for food manufacturers and commodity boards. Clients include Kraft Heinz Away From Home, Barilla Global and Unilever Food Solutions.

With English parents, a Canadian husband and a childhood spent in Latin America and the Caribbean, Katie enjoyed global flavor mash-ups before they became a trend. A graduate of Northwestern University, she lives in Chicago and is not afraid to admit that she loves a buttery Chardonnay.
