4:00pm - 4:30pm: Arrival & Cheese Happy Hour

4:30pm - 5:00pm: Cheese Education – flavors, trends, applications, pairings, etc

5:00pm - 6:00pm: Traditional Fondue

Meet Your Speaker:

Evan Topel has been the Corporate Chef for Emmi Roth USA, an award-winning specialty cheese manufacturer and converter based out of Stoughton, Wisconsin, for 14 years.  He works closely with Emmi Roth’s National Accounts, Foodservice, Industrial, and Retail Teams and their customers to offer R&D solutions and culinary support.  Chef Evan’s career in the food and cheese industry spans well over 25 years.  After culinary training in Wisconsin, Chef Evan spent his early career working at the American Club in the Immigrant Room, Bakery and Banquets before taking the Sous Chef position for Cucina Italian Restaurant, a part of the Kohler Company.  Chef Evan moved on to operate his own restaurant and consulting firm for 18 years where he supported the efforts of the Wisconsin Milk Marketing Board & US Dairy Export Counsel developing cheese education & training programs for food professionals and mongers. Through these various programs Chef Evan has trained thousands of chefs and food professionals both nationally and internationally.
