Join us and Chef Travis McConnell, an Artisanal Butchery Instructor at Brightwater, for an educational event that includes a whole hog butchery demonstration, product tasting, and hands-on experience. He will demonstrate whole animal butchery and basic salumi and fresh sausage techniques. 
 
Schedule:
1:00 p.m. Arrival 
1:15 p.m. Whole hog butchery demonstration
2:30 p.m. Basic Salumi and Italian Sausage production demonstration
3:30 p.m. Product Tasting
4:00 p.m. Dismissal
